30 minute Gorgonzola Penne
November 5, 2007
This recipe takes about 30 minutes and people will think it took you hours.
Ingredients
* Penne pasta
* 3 Chicken breasts, cut into 1.5 inch chunks (!!Optional!!)
* Gorgonzola Cheese (crumbled/ chopped in small chunks); about 1 cup. The fatty-creamy kind (usually not crumbled) is better.
* Broccoli florets (small size); about 2 cups.
* Sun dried tomatoes (julienned); almost a cup.
* Pine Nuts or Walnuts (crumbled); about a half cup.
* Garlic (2-3 cloves)
* Cream (half and half is fine)
* Olive Oil
* Parmesan cheese (grated or shaved)
* Pepper
* Misc. Italian Herbs; fresh basil (julienned) is nice if you have it.
Instructions
Start boiling pasta; prep broccoli florets for steaming; when pasta boils, you can also steam the broccoli. This takes about 5 minutes.
When the pasta is almost done, do the following:
- Prep all the other ingredients. This is because everything to follow is really quick.
- In an oiled pan, add crushed garlic, cook the optional chicken until done. (5 min.)
- Drain and cool the pasta. (1 min.)
- Add 1/2 the gogonzola to the pan with the chicken; add the tomatoes and then some cream to make a cream sauce. (3 min.)
- Toss everything above together in a big bowl, adding herbs, pepper, and parmesan to taste; toss until it looks fancy and well mixed. (5 min.)
- Serve with some italian/french bread and olive oil. (5 min.)
