30 minute Gorgonzola Penne

This recipe takes about 30 minutes and people will think it took you hours.

Ingredients

* Penne pasta
* 3 Chicken breasts, cut into 1.5 inch chunks (!!Optional!!)
* Gorgonzola Cheese (crumbled/ chopped in small chunks); about 1 cup. The fatty-creamy kind (usually not crumbled) is better.
* Broccoli florets (small size); about 2 cups.
* Sun dried tomatoes (julienned); almost a cup.
* Pine Nuts or Walnuts (crumbled); about a half cup.
* Garlic (2-3 cloves)
* Cream (half and half is fine)
* Olive Oil
* Parmesan cheese (grated or shaved)
* Pepper
* Misc. Italian Herbs; fresh basil (julienned) is nice if you have it.

Instructions

Start boiling pasta; prep broccoli florets for steaming; when pasta boils, you can also steam the broccoli. This takes about 5 minutes.

When the pasta is almost done, do the following:

  1. Prep all the other ingredients. This is because everything to follow is really quick.
  2. In an oiled pan, add crushed garlic, cook the optional chicken until done. (5 min.)
  3. Drain and cool the pasta. (1 min.)
  4. Add 1/2 the gogonzola to the pan with the chicken; add the tomatoes and then some cream to make a cream sauce. (3 min.)
  5. Toss everything above together in a big bowl, adding herbs, pepper, and parmesan to taste; toss until it looks fancy and well mixed. (5 min.)
  6. Serve with some italian/french bread and olive oil. (5 min.)
